First all the reviews were so good and it suggested that you can freeze baked crusts for ease I made a lot of “dough”. Three heads of cauliflower! I used my Cuisinart food processer to rice them…it was still messy. Made a big bowl of “Pizza Dough”
Then on a pizza stone or a pizza pan you bake the crust…so Thinner is better…crunchier is better….just what we found..Then you build your Pizza the traditional way…although we were mindful of the reviews and did not mound them up too high….A little sauce
A little fresh Basil
Or if you are Ellie and Jon a little white sauce
Then your choice of toppings…we had browned sausage, ham, pepperoni, artichoke hearts, olives, onions, green pepper, mushrooms…remember you are only broiling for a couple of minutes…I like my vegies crunchy if you like them cooked more-you might want to pre cook them
Then you Broil to your liking about 5 min we had the broiler on low
Then you Chow down…at least those three did! I could only eat a third of mine…it’s in the fridge for lunch today!!
Now Dave-he does not LIKE cauliflower….he ate the whole pizza! and wants to eat it again!
Forget the plates…we will just eat off the pan,,,hahaha. This is not a pizza you can pick up and it doesn’t taste like bread but it is soooo good have an open mind!
They were SOOOOO good I am making individuals for my lunches! I will just cut the parchment paper, and use it as a baking tray in our little oven at work….pop them in a freezer bag…like turkey patties…
some people recommend brushing the top with olive oil to help with browning. These baked for about 24 minutes on 400 convect bake..we did not find much difference between a stone or a baking sheet-although eaier to get off with parchment paper..

Healthy + Gluten Free Pizza with a Cauliflower Crust

Cook time: 35 mins
Total time: 50 mins
- ½ head cauliflower (about 2 cups riced)
- 1 clove garlic, minced
- 1 cup part-skim shredded mozzarella cheese
- 1 egg, beaten
- 1 teaspoon basil
- 1 teaspoon oregano
- Pre-heat oven to 400° F.
- Prep a cookie sheet or pizza stone. You can grease the cookie sheet or use parchment paper. (I used a Pampered Chef baking stone, which doesn’t require any prep if it’s seasoned.)
- Remove the stems and leaves from your cauliflower and chop the florets into chunks. Add to a food processor (I used my Vitamix) and pulse just until the texture is similar to rice. If you don’t have a food processor or Vitamix, you can grate the cauliflower with a cheese grater or chop it. I used the vegie shred blade worked great
- Sauté cauliflower “rice” in a non-stick skillet over medium heat and cook until translucent, approximately 6-8 minutes. (You can use the microwave for this as well. Just place cauliflower in an uncovered microwave-safe bowl and cook for 8 minutes.)
- In a bowl combine the cooked cauliflower with all remaining ingredients.
- Spread dough out evenly over parchment paper (or stone) – about ¼ to ⅓ of an inch thick. The pizza should be about 9-10 inches in diameter.
- Bake for 25-30 minutes or until the crust is golden, crispy on the edges and cooked through the middle.
- Remove the crust from the oven.
- Top with pizza sauce and toppings. Be careful not to add too many heavy toppings as you don’t want to weigh down the crust.
- Broil the pizza for 5 minutes, or until the toppings are hot and the cheese is melted. Allow the pizza to cool for 2-3 minutes then cut and serve immediately.
